When Tortillas Are an Answer to Prayer
Ever since we got Brady’s “diagnosis” of 28 allergies, I’ve been praying for resourcefulness and creativity.
Fact is, I’m surrounded by great resources. Many people at church have food allergies in their families (none as many as my sweet boy, but they know how to play the game.) We are also blessed to live in an area with many good health food stores! I just have to figure out how to make the money stretch a bit…
Anyway, I’ve been trying to think of some creative way to make bread for Brady that doesn’t include wheat (or any form of gluten), eggs or yeast. Not an easy task.
But then I remembered something my mom used to make for us: fried bread.
I don’t know if it’s a real recipe or something she made up, but it’s a very yummy, doughy, heavy bread that’s fried. (Um, profound, I know.)
Anyway, I got the idea to try to make a similar recipe with gluten free flour and make the dough really thin. That way, I can “fry” the bread on my griddle and sort of make my own tortillas!
I did it today and Brady loved them! Slather them with some almond butter and he was elated. I’m hoping he’ll enjoy them for a taco tonight, too.
This little idea may save us hundreds of dollars worth of specialty breads. Thank God! ![]()

I don’t suppose you could feature that recipe on your blog? or send it to me? I’m desperate. We haven’t had bread in ages, and although I don’t really care, the kids miss it. I just haven’t been able to figure that out, yet.
It’s amazing how I view the grocery store, now. Whilst trying to commit little Brady’s allergies to memory, I walk down the aisles and it’s, “That’s out, that’s out, that’s out, that’s in!, that’s out, that won’t work either. Bother.” My prayers have increased for you tenfold over the last few days. And know that we will be doing all we can to do our part in making meals safer for our Brades anytime he is with us.
