WFMW: Pancakes with a Twist

We eat “breakfast for dinner” a lot around here. Omelettes and pancakes are among our favorites. Omelettes offer a lot of variety, but when you have a kid that’s allergic to dairy, the pancakes can be a bit tricky.

Until now!

A few weeks ago, I made pancakes and ingenuity struck me. Why not use orange juice instead of milk?! I tried it and it was delicious. It offered a very subtle hint of orange taste, but lots of extra vitamin C.

Since then, we’ve also tried making them with white grape juice, which was also good. We still like the OJ best though.

Give it a try. You’ll like it. I promise.

    Great idea! I’ll remember it the next time I’m out of milk and want to make pancakes. I like putting mashed bananas in our pancakes…that would go well with a hint of orange!

    What a great idea! I have one child that is lactose intolerant, so this will be a great option for us as well. Thank you for sharing! I love it! :)

    We have lots of different variations:
    -make with apple juice, stir in shredded apple and lots of cinnamon
    -make with water (we’re dairy free) and add smashed banana and lots of cinnamon.. top each pancake with some chopped walnuts before flipping.
    -make with crushed pineapple, use that juice and add water as needed, stir in toasted coconut flakes

    Great Idea!! I have never changed the liquid before - but we have added stuff like: mashed bananas or apple sauce and cinnamon. Thats worked for us because it adds enough flavor to the pancake that my son doesn’t use sugary syrup on his pancakes.

    Ooh, I make some pancakes from a recipe that call for OJ instead of milk, and poppy seeds. They’re super fluffy and orangey. Like something you’d get in a nice restaurant. I like the white grape juice idea!

    We’ve been doing this too and the taste simply can’t be beat!! We use ww flour and some ground flax too. They are really healthy. Friends who don’t even eat healthy love these pancakes.

    Love all the ideas that are posted here! My son is very picky, so I try to add fruits + veggies to our pancakes. I’ve done diced, cooked carrots and pureed avacado. Both kids love them!

    I add pureed sweet potatoes- about 1/2 cup (or sweet potato baby food!) along with some cinnamon. They’re so good.

    Good idea! My favorite is banana pancakes, just mash up a banana and stir it in!

    What a great idea! My kids can all tolerate milk just fine but I’ll keep this in mind for those times I get everything going and then realize I’m out of milk. It happens way more often than I care to admit.

    We like to add pumpkin spice to our pancakes. Makes them taste very “Fall”. Also bananas are a favorite.
